Orange and Sultana Breakfast Muffins

ORANGE AND SULTANA BREAKFAST MUFFINS

INGREDIENTS

  • 175g wholemeal self-raising flour
  • 2 teaspoons baking powder
  • 5 tablespoons wheat bran
  • 2 tablespoons golden linseed
  • 4 tbsp rolled oats
  • 75g soft brown sugar
  • Finely grated zest of 1 large
  • orange
  • 100g sultanas
  • 3 tablespoons sunflower oil
  • 2 large eggs
  • 250ml Rice and Easy

MAKES 9 MUFFINS

 

METHOD

Preheat the oven to 190ºC/fan 170ºC/gas 5.

Place nine large muffin cases in a deep muffin tin.

Stir together the flour, baking powder, wheat bran, linseed, half of the oats, brown sugar, orange zest and sultanas. In a jug, mix together the oil, eggs and Rice and Easy.  Pour into the dried ingredients and mix until just combined. Spoon into the muffin cases and scatter the remaining oats over the top.

Place in the oven, and bake for 25 minutes or until the muffins have risen and are cracking slightly on their tops. Once cooked, remove from the oven and leave to cool slightly before eating warm or leave until cold.
